Method

Preheat the oven to 200C (fan-assisted).
TIP
If you want extra fluffy centres and crispier edges, parboil the potatoes in salted water for 5–7 minutes before roasting. Drain well and let them steam dry.

Place the potatoes on a large baking tray and season with salt and freshly ground black pepper.

Melt the butter in a saucepan.

Bash the rosemary with a rolling pin and add half to the potatoes, then coat with a generous layer of butter. Save some butter for later.
TIP
Take your crispy potatoes to the next level by throwing them in the air fryer. Avoid overcrowding the potatoes in the basket and arrange them in a single file to ensure they get mushy on the inside and crispy on the outside.

Roast the potatoes in the oven for 10 minutes, then remove and coat with extra butter. Sprinkle over the remaining rosemary and garlic and return to the oven for a further 15 minutes until the potatoes are golden, crispy, and cooked through.
