This sandwich icon boasts layers of juicy chicken and salty bacon, along with the freshness of Little Gem lettuce, ripe tomatoes, and crisp slices of red onion. Method

1
Preheat the oven to 180°C/170C fan/gas mark 5.
TIP
For a classic club sandwich, set your toaster or oven to medium-high, and toast your bread until golden on the outside and tender within. Let the slices cool before assembling the epic sandwich. This will prevent the ingredients from going soggy.
2
Pour oil over the chicken breasts and place in a roasting dish and cook in oven for 15-20 minutes until golden.
TIP
Instead of buttering the bread after toasting, you can do it before. Butter all the slices of toast on both sides and toast them in a pan or the oven, flipping them over so they turn golden on both sides. This makes them crispier and taste even more buttery.
3
Toast the bread on both sides and spread with butter. Butter the middle slice on both sides.
4
Place lettuce, tomatoes, and sliced chicken onto the bottom slice of bread. Top with the middle slice of bread and add more lettuce, bacon, and red onion. Close the sandwich with the third slice and secure it with a wooden skewer.

Questions about the classic club sandwich. Become a club sandwich expert with our answers to the top questions about this iconic sandwich.

  • The best bread for club sandwiches is one that toasts well and is strong enough to hold the layers of fillings. The slices should be medium thick, and you should toast them to add a crisp texture and help them hold up against the moist ingredients. A soft yet slightly dense bread will balance structure and tenderness, making it easier to bite through the multiple layers. The flavour should not be too strong, so to overpower the fillings. White bread or multigrain bread are excellent choices because they have a sturdy texture and a mildly sour flavour that enhances the other ingredients.
  • A club sandwich includes three slices of bread to create two layers of fillings. This way, you get a bit of everything in each bite with a perfect bread-to-filling ratio. The three slices of bread separate the fillings into two sections, usually with one layer holding some of the juicier ingredients, such as chicken and tomato, and the other layer holding the less juicy ingredients, such as onion and bacon. You typically put lettuce in both sections. The centre slice also provides stability, keeping the layers distinct and the sandwich together.
  • If you have more sandwiches than you can eat, store them properly so you can enjoy them later. Aim to eat the stored sandwich within 24 hours to enjoy the best flavours when the ingredients are at their peak quality. After that, they will start to lose their freshness. Wrap the sandwich tightly in baking paper or cling film and store it in the fridge for 3-4 days.
