Method

Preheat the oven to 160C/140C fan/gas mark 3.

Cut butter into small cubes and mix with the remaining ingredients in a mixer, reserving a little flour for shaping the cookies.

Knead the mixture thoroughly until a smooth dough forms. If the dough is too soft and sticky, place it in the fridge to rest for a short while.
TIP
After mixing in the butter, handle the dough gently to obtain an extra flaky texture. Overworking the dough can result in denser cookies, so keep the kneading to a minimum for a more delicate crumb.

Twist the dough into cookies, about 25g each, and place them on baking trays lined with baking paper.

Play around with the shapes, making different braids or twists, or get creative with tiny knots for a unique, handmade touch.

In a bowl, whisk together egg and milk, then brush this mixture over the cookies.

Bake for 25-30 minutes until the cookies are golden brown.

To ensure an even bake, rotate the baking tray halfway through the cooking time. This helps all the cookies achieve that perfect golden-brown colour and consistent texture.
