Basbousa with Qashta

  • 1 cup semolina
  • ½ cup sugar
  • 2 tsp baking powder
  • 1/8 tsp bicarbonate of soda
  • 1/8 tsp salt
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup yogurt
  • ¾ cup Lurpak Unsalted Butter

For the qashta:

  • 2 cups milk
  • 2 tbsp corn starch
  • 2 tbsp flour
  • 1 tbsp sugar
  • ¼ cup cream
Basbousa with Qashta


  1. Mix the semolina, sugar, baking powder, bicarbonate of soda, salt, eggs, vanilla and yogurt together in a bowl.
  2. Melt Lurpak butter in a bowl over a pot of boiling water.
  3. Add the melted butter to the semolina mixture and mix well to combine.
  4. To make the qashta: mix together the milk, corn starch, flour and sugar in a large pot. Keep stirring to avoid lumps.
  5. Add the qashta to the milk mixture and mix well to combine.
  6. Grease a baking dish with Lurpak butter, pour quarter of the basbousa dough inside the tray and bake in preheated oven for 10 minutes.
  7. Pour all the qashta and top with the rest of the basbousa dough.
  8. Bake for 30 more minutes.
  9. Garnish with crushed pistachios and serve.
