Use any thin skewer as a cake tester. Insert it into the centre of the cake, it should come out clean. You don’t want any signs or smears of mixture. A few small crumbs are okay.
Then also use your hands to check if it’s done. Feel the texture. The middle of the cake should feel springy and pillowy when you gently press your finger against it.
COVER WITH FOIL
If you can start to see your cake browning on the outside but you know it isn’t done on the inside, then foil is your friend. Cover it for the remaining bake time.
