Lime spiked pancakes topped with blueberries, pecans, maple syrup
Method

Place the flour, baking powder, salt and brown sugar in a large mixing bowl. Make a well in the center and pour in the eggs, Lurpak® Butter and milk. Start whisking, drawing in the dry ingredients slowly as you go. Whisk until you have a smooth batter, then stir in the lime zest. Or, you can whizz all the ingredients in a food processor and then stir in the lime zest.

Heat a griddle or large heavy based frying pan. Add a small knob of Lurpak® Butter and as soon as it has melted place a tablespoon of batter into the pan.

When the top of the pancake starts bubbling, turn over and cook the other side for a further 1 minute or until the pancake is cooked through. Remove onto a baking tray and cover loosely with foil. Keep warm in a low temperature oven.

Repeat with the remaining batter.

Serve the pancakes in a pile with a scattering of blueberries, pecans, a drizzle of maple syrup and a topping of Lurpak® Butter.
