Method

Preheat a medium-sized griddle pan over medium heat. Slice the bread in half horizontally and butter generously.
TIP
Do you not have a griddle pan or panini press? You can still make a crispy panini. Bake your panini in a hot oven on a baking sheet until the cheese melts and the bread browns, flipping once to ensure it cooks evenly.

Drape Parma ham along the base of the sandwich. Add tomatoes and mozzarella in an even layer and top with basil leaves. Finish with a few twists of black pepper and close the sandwich.
TIP
You can make the panini in advance. Butter the bread and add the fillings. Wrap the panini in cling film and store it in the fridge.

Carefully place the sandwich onto the pan and place a weight on top (for example, a heavy saucepan lid) to compress the sandwich. Flip it over after a few minutes and continue cooking until the cheese melts and oozes. Alternatively, use a panini press if you have one. Remove from the pan and serve.
