Golden and crisp on the outside, soft and buttery on the inside, these roasted potatoes are proof that the simplest dishes are often the best. They are easy to make and go with just about anything, from roast lamb to baked salmon. With a good measure of Lurpak®, they transform from simple to glorious in no time.

Method

1
Preheat the oven to 200C (fan-assisted).
TIP
If you want extra fluffy centres and crispier edges, parboil the potatoes in salted water for 5–7 minutes before roasting. Drain well and let them steam dry.
2
Place the potatoes on a large baking tray and season with salt and freshly ground black pepper.
3
Melt the butter in a saucepan.
4
Bash the rosemary with a rolling pin and add half to the potatoes, then coat with a generous layer of butter. Save some butter for later.
TIP
Take your crispy potatoes to the next level by throwing them in the air fryer. Avoid overcrowding the potatoes in the basket and arrange them in a single file to ensure they get mushy on the inside and crispy on the outside.
5
Roast the potatoes in the oven for 10 minutes, then remove and coat with extra butter. Sprinkle over the remaining rosemary and garlic and return to the oven for a further 15 minutes until the potatoes are golden, crispy, and cooked through.

Questions about roasted potatoes

Want to make perfect roasted potatoes? You are in luck! Below you will find answers to some of the most commonly asked questions about this beloved side dish.

  • Yes, potatoes can be roasted. Their thin skins get beautifully crispy in the oven, while the insides stay soft and buttery. To prepare them, just give them a quick wash (no need to peel), cut any large ones in half, and spread them out on a baking tray. Season them with salt, pepper, and rosemary. Coat the potatoes with melted butter and roast them in the oven for about 10 minutes at 200C before adding crushed garlic, more rosemary, and melted butter. Place the tray bake in the oven and roast for another 15 minutes until the potatoes are golden and crisp on the outside.
  • Before you roast potatoes, give them a good rinse and cut any larger ones in half so they cook evenly. While you do not have to parboil them, you can absolutely do so if you want extra fluffiness inside and a crispier finish. Just boil them for 5–7 minutes, drain well, and let them steam dry before roasting. Spread the potatoes on a tray, season with salt and pepper, and toss with melted butter and half the rosemary. Roast in a preheated oven at 200C for 10 minutes, then add the rest of the butter, garlic, and rosemary, and return to the oven. Roast for another 15 minutes, or until golden, crispy on the outside, and soft on the inside. You can also preheat the tray before adding the potatoes to get that golden crunch from the get-go.
  • You can boil the potatoes before roasting, but in the end, it really depends on the texture you want. Parboiling potatoes before roasting can give them an extra fluffy inside and help the edges crisp up even more in the oven. It is especially useful if the potatoes are on the larger side or if you want an extra crispy exterior. Simmer the potatoes in salted water for about 5–7 minutes until they start softening. Drain them well and let them steam dry before tossing with butter and seasoning, then roast as usual. That said, potatoes have a naturally soft, creamy centre and thin skins that roast beautifully without boiling first. If you are short on time, you can skip the boiling and still get delicious results.
  • Your potatoes might not be crisping up for a few reasons. If you skip parboiling, the potato starches will not always break down sufficiently for crispiness. Try simmering your potatoes in salted water for 7–10 minutes, then drain and dry them before roasting. Make sure not to overcrowd the potatoes on the tray; they need space to let heat circulate and moisture escape. Also, make sure your oven is preheated to at least 200C to get them properly crispy.
  • Roasted potatoes are done when they are golden brown with crisp edges, and you can easily slide a fork or knife into the centre. Try poking the largest potato. If the fork or knife goes in easily without any resistance, it is cooked perfectly inside. If your potatoes are not golden or tender after the initial 25 minutes of roasting, keep them in the oven and check them every 5 minutes until they are just right.

Make roasted potatoes with garlic and rosemary

Delight your guests with roasted potatoes. Once you have tried them, you will know why they have earned a place at the table. Potatoes have a naturally creamy texture and delicate sweetness that holds up beautifully to roasting.

Add crushed garlic and fresh rosemary, and you instantly elevate the dish with a superb aromatic taste. The garlic caramelises in the oven, adding a subtle sweetness and nuttiness, while the rosemary infuses the butter and potatoes with its unmistakable earthy, piney notes. It is one of those combos that just works every single time.

Buttery soft on the inside and golden crispy on the outside

What makes these crispy potatoes such a hit is their irresistible texture, which is buttery soft and crisp at the same time. Because of their thin skins and waxy flesh, potatoes get a golden exterior that gives way to a pillowy inside when roasted in the oven. The dry heat draws moisture to the surface, allowing the edges to caramelise while the steam locked inside softens the centre. And with a good measure of Lurpak® butter, you end up with roasted potatoes that are crisp where it counts and soft where it matters.

The perfect side dish for a family dinner

Roasted potatoes are a side dish that works with almost any dinner. Made with just a few simple ingredients and minimal prep, they are an easy win, and everyone loves them. Their mild, buttery flavour and golden crunch appeal to both kids and grown-ups. Whether you are serving chicken, fish, vegetables, or a roast, they fit right in. It is a humble, rustic side with plenty of appeal, and one you can always count on.

Delicious pairing ideas for your roasted potatoes

These golden, crispy potatoes are very versatile, giving you plenty of ways to enjoy them. For something hearty, try them with a juicy rib-eye steak and slaw to balance the richness of the meat. If you prefer fish, baked salmon offers a buttery, flaky contrast that highlights the rosemary and garlic.

They are also a great choice for festive occasions. Serve them alongside lemon and sage roast turkey or orange and cranberry roast turkey. Or go for something a little more rustic with pan-fried lamb chops or a classic roast leg of lamb.

And if you are skipping the meat, oven-roasted vegetables are always a solid option. Not only will they add colour to your plate, but their sweetness and variety in texture also complement the potatoes’ crispy edges and soft centres. No matter what you pair them with, these potatoes are always a welcome addition.

Creative ways to add your own touch

Here are a few ideas on how you can add your own touch to the recipe. Instead of rosemary, try thyme, oregano, or whatever herbs you have lying around. You can even throw in a handful of chopped parsley at the end for a bit of freshness. If you like a little kick, add some chilli flakes or smoked paprika to the butter before roasting.

A bit of lemon zest or a squeeze of juice at the end can really brighten things up, too. This is one of those recipes you can play around with until it is just the way you like it, so do not be afraid to get creative.
