Method

Heat the oven to 170c/160c fan gas 4/325f

Roast the almonds on a baking sheet for 5-10 minutes until golden. When cool enough to handle, chop roughly and set aside.

Make the dough by mixing the butter, extracts, flour, almonds and a pinch of salt together in a medium bowl. Bring the mixture together to form a slightly sticky dough.

Roll out the dough on a lightly floured surface to about 1/2cm thick.

Cut the cookies with a 6cm cookie cutter and place the cookies on a lined baking sheet.

Bake in the oven for 12-15 minutes until golden

Cool on a rack before dusting generously with icing sugar.
TIP
Try using vanilla sugar to dust. You could even make your own by adding vanilla pods and sugar together into an airtight jar and leaving for 2-3 weeks to infuse.

  • Polvorones are made from a simple mix of flour, sugar, fat and ground almonds (or other nuts.) Thet often include a bit of cinnamon or vanilla for flavour, but these can be totally optional to keep the recipe simple.
  • Though the cookies can now be found in many Spanish-speaking countries, Polvorones originated in Spain, in the Andalusia region. They have been a traditional treat for centuries, especially enjoyed during Christmas and other celebrations. The recipe spread to Latin America with Spanish colonisation.
  • Our recipe does not make gluten-free or vegan Polvorones because of the wheat flour and butter but you could use Lurpak® Plant Based to make the recipe vegan or use gluten free flour to make the recipe gluten free.
