Preheat your oven to 170C/150C fan/gas mark 3.

Heat an oven-proof frying pan and add half the Lurpak® Plant Based. When it is bubbling, add garlic and cook for 1 minute, stirring continuously. Add onions and cook for a further 5 minutes.

Add the remaining Lurpak® Plant Based, broccoli, and water. Cook for 2-3 minutes more or until the broccoli is just tender. If the pan dries out, add another tbsp of water.

Pour in the egg mixture and tilt the pan so it distributes evenly. Cook for 2-3 minutes over medium heat or until the eggs have just set on the bottom. Sprinkle over flat-leaf parsley and Parmesan.
TIP
Get a perfectly cooked frittata with minimal effort in an air fryer. Preheat the air fryer for 3-5 minutes before adding the frittata mixture for the best result.

Transfer your pan to the oven for 25 minutes or until the frittata is firm and golden. Cut into wedges and serve with a green salad.
TIP
Let the frittata rest for a few minutes after removing it from the oven. This helps it set fully and makes it easier to cut it into neat wedges.

Following our straightforward recipe, you can easily make a delicious frittata with broccoli and red onion. But if you want to know more about it before getting started, find the answers to some common questions below.

  • You do not need to cover it when baking. If you do not put it in the oven, meaning you finish cooking it on the stove, you should cover the pan with a lid to allow it to bake on the stove. Baked in the oven, you do not need to cover it with a lid.
  • You need a 25-28 cm pan that can go in the oven as you start cooking the frittata on the stove and then transfer it directly to the oven. Transferring it to a plate before baking will ruin both its shape and the baking process. Choose the right pan to get the best result, preferably a non-stick pan or a well-greased cast iron pan. Ensure the pan is not too small, as it will make the frittata too thick and difficult to cook properly, resulting in a rubbery texture. Conversely, a too large pan will make the frittata flat like a pancake, which is not ideal either.
  • You can tell that it is done when the egg mix is almost set in the centre; it still must be a bit loose. If you give it too much, it can become rubbery and dense. After removing it from the oven, let it sit for a few minutes, which will finish baking the eggs while making sure it stays light and fluffy.
