Toasting your rice in butter before adding the water brings a real depth of flavour. Melt a couple of tbsps. of butter in a saucepan over medium heat. Then add the rice and stir up to coat it in the melted butter.

Only once your rice is coated in melted-butter deliciousness should you add the water and a pinch of salt. Bring it to the boil before tossing in saffron, turmeric, or any other favourite spice to build beautiful colour. Go roughly for a few threads of saffron or ½ tsp. of turmeric for every cup of rice.
