Omelette with Cheese, Chives and Red Pepper

Ingredients and Recipe Outline
3 medium eggs at room temperature
20g grated Gruyere cheese
30g red bell pepper, chopped fairly small (roughly 1/4 of a medium pepper)
1 heaped tbsp of chopped chives
1 tsp Lurpak Spreadable
Salt and Pepper
Whisk the eggs until just mixed and season well.
In a small non-stick frying pan on a medium heat add the Lurpak Spreadable, swirling the butter until it melts and coats the base of your frying pan. The moment the butter is bubbling pour in the egg mixture into the hot pan, then immediately add the chopped red pepper, cheese and chives. Shake the pan to evenly distribute the mixture then leave for 10 seconds. Then using a wooden fork or spatula, bring the sides of the mixture into the middle whilst shaking the pan to redistribute the uncooked egg mixture into any gaps. The omelette is done when it is still slightly runny in the middle. Flip one half over the other then serve immediately.
