500g small carrots in assorted colours, scrubbed and halved

60g Lurpak® Slightly Salted butter

1 tbsp chopped rosemary, without the stems

3 tbsp honey

Before you get started, make sure you pre-heat your oven to 200 °C.

Line up the carrots in a single layer on a baking tray. Next, in a small saucepan, melt your Lurpak® Slightly Salted butter over a low-medium heat until it starts bubbling and smells a little nutty – it should take about five minutes. Be careful not to burn the butter as you heat it. Then mix in the honey and chopped rosemary. 

Brush the rosemary and honey butter onto both sides of the carrots, and drizzle any extra on top. Roast for 30-35 minutes, then season to taste and serve while still warm.
