Lurpak Low Carb Cookies

  • 3/4 Cup Lurpak Butter (soft)

  • 3/4 Cup Xylitol

  • 2 Eggs

  • 2 tsp Vanilla Essence

  • 1 tsp Baking Powder

  • 2 1/4 Cups Almond Flour

  • 200g Dark Chocolate (melted)

  • Crushed Almonds (for topping)

Lurpak Low Carb Cookies


  1. Cream the butter and xylitol together until light and fluffy.

  2. Add the vanilla essence and continue mixing.

  3. Add both eggs and mix until fully incorporated.

  4. Mix in the almond flour and baking powder until just combined.

  5. Cover the mixing bowl and place the batter in the fridge for at least 1 hour.

  6. Use your hands to roll the batter into balls and place them on a lined baking sheet, pressing them flat slightly.

  7. Bake the cookies for 15 minutes at 180ºC or until golden brown.

  8. Allow them to cool fully.

  9. Carefully dip the cookies in the dark chocolate and sprinkle with crushed almonds.
