Fig and Chocolate Banana Bread

6 servings

120g Lurpak butter

3 ripe bananas

2 large free-range eggs

1 tsp vanilla extract

225g (1 ½ cups) all-purpose flour

150g (¾ cup) sugar

1 tsp baking powder

¼ tsp bicarbonate of soda

1 tsp ground cinnamon

Pinch sea salt flakes

100g dark chocolate, diced into chunks

200g (6 large) fresh figs, sliced into eighths

 

Fig and Chocolate Banana Bread

Preparation

Preheat oven to 180˚C and grease a loaf pan with butter.

Melt butter in a small saucepan.

Mash the bananas in a large bowl. Add the melted butter, eggs and vanilla extract. Mix well.

In a separate bowl- combine the flour, sugar, baking powder, bicarbonate of soda, cinnamon and salt. Whisk to mix them well.

Pour the banana mixture into the dry ingredients and mix until just incorporated.

Add the chocolate chunks and fresh figs and fold them in gently.

Bake the loaf for 60 minutes until a skewer inserted comes out clean.

Allow to cool slightly before turning out of the tin.

Serve with a swish of softened butter and enjoy.
