Heat Lurpak Cooking Mist in a large skillet over high heat. Add the turkey; cook until brown on one side, 3 to 5 minutes.
Transfer the turkey to a baking pan. Season with salt and pepper and place in the oven. Roast until the turkey is cooked throughout, 15 to 20 minutes. Transfer the turkey to a plate and cover with foil to keep warm.
In a large skillet, spray again Lurpak Cooking Mist and add onions and thyme. Cook for 2-3 minutes then add cherries.
Stir in pomegranate molasses and honey and cook until cherries burst and releases juices; and the mixture becomes thick.
