Turkey Breast With Thyme And Cherries Sauce

• 4 turkey breasts
• Lurpak Cooking Mist
• Sea salt, to taste
• Freshly ground pepper, to taste
• 1 medium onion, chopped
• 1 tbsp fresh thyme washed and leaves picked
• 1 ½ cups cherries
• 2 tablespoon pomegranate molasses
• 1 tbsp honey

Turkey Breast With Thyme And Cherries Sauce

Preparation

  • Heat Lurpak Cooking Mist in a large skillet over high heat. Add the turkey; cook until brown on one side, 3 to 5 minutes.
  • Transfer the turkey to a baking pan. Season with salt and pepper and place in the oven. Roast until the turkey is cooked throughout, 15 to 20 minutes. Transfer the turkey to a plate and cover with foil to keep warm.
  • In a large skillet, spray again Lurpak Cooking Mist and add onions and thyme. Cook for 2-3 minutes then add cherries.
  • Stir in pomegranate molasses and honey and cook until cherries burst and releases juices; and the mixture becomes thick.
  • Slice the turkey and serve with the cherry sauce.
