Easter cookies “koulourakia” flavoured with citrus fruit

  • 400 gr all-purpose flour
  • 80 gr Lurpak® butter at room temperature
  • 120 gr powdered sugar
  • 2 eggs
  • ½ tsp baking powder
  • 75 gr milk
  • 1 vanilla sachet
  • 1 lime zest
  • 1 orange zest
  • 1 egg beaten for brushing

Preparation

Place the Lurpak® butter along with the sugar in a mixer bowl and whisk it with the wire until the mixture is soft and fluffy.

Lower the speed and add the eggs one by one waiting for each to be incorporated into the mixture before adding the next one.

In a bowl, mix the flour, the baking powder and vanilla.

Add the flour together with the milk and the zest from the orange and lime and continue kneading, using now the flat beater, until you have a dough, but not too tight.

Remove the dough from the mixer bowl and let the dough rest in the fridge for 30 minutes.

Shape your dough in cookies (koulourakia), place them in a baking pan, brush them with the beaten egg and bake them in a preheated oven at 160 ° C for 20-25 minutes.

If the buns are big the baking time may take longer.
