Lurpak Butter Chicken Bunny Chows

6 servings
30 ml oil
80 ml LURPAK butter
500 g skinless chicken breasts
1 onion, finely chopped
2 cloves garlic, crushed
A 3 cm piece ginger, grated
15 ml garam masala
5 ml ground coriander
5 ml ground cumin
5 ml chilli powder
5 ml turmeric
1 x 410 g can chopped peeled tomatoes
30 ml brown sugar
125 ml double cream plain yoghurt
Salt to taste
To serve:
6 soft hamburger buns
60 ml LURPAK butter, melted
Coriander for serving
Double cream plain yoghurt for serving
Lurpak Butter Chicken Bunny Chows

Preparation

Heat half of the oil and the butter together. Add the chicken breasts and fry until golden and just cooked. Cut into strips. Set aside.
Heat the remaining oil and butter together. Fry the onion until soft. Add the garlic, ginger and spices and fry for 30 seconds. Add the tomatoes and sugar and cook for 2 minutes. Leave to cool slightly. Add the yoghurt and blend until smooth. Add to the chicken. Simmer over low heat for 5 – 10 minutes. Season to taste with salt.
To serve:
Hollow the hamburger buns out from the top. Drizzle the melted butter over. Spoon the butter chicken inside. Top with coriander and serve with extra yoghurt on the side.
