Minced Meat Moussaka

500g minced beef

5 onions peeled and minced fine

1 teaspoon ground black pepper

1 teaspoon salt

2 teaspoons all spice

2 tablespoon Lurpak butter for cooking the minced beef

2 tablespoons of Lurpak butter for grilling eggplants

6 ripe tomatoes, peeled and chopped into cubes

3 large eggplants, peeled and cut into thick long slices (may also be used without peeling) once cut, it needs to be immersed in water with 2 tablespoons of salt

150g pine nuts

3 tablespoons Lurpak butter for frying the pine nuts

Preparation

Preheat the oven to 180 degrees. Brush the eggplant slices on either side with butter and grill the slices for 10 minutes. Saute the onions with butter and add salt, on low heat for 15 min, stirring it well. Add the minced meat, cooking it well on high heat until no water remains in the pot.

Fry the pine nuts in butter, until they turn golden.

Preheat the oven to 180 degrees. Place eggplants, minced meat, pine nuts and tomatoes in your baking dish and bake for 35-45 minutes. Serve hot.
