Chicken Biryani

2 ½ cups basmati rice
2 large onions –sliced
5 crushed garlic cloves
1 tablespoon fresh ginger – peeled
3 large potatoes – cut into medium size cubes
3 medium size tomatoes- cut into small cubes
1 cup yoghurt
6 pieces of chicken (breast or drumsticks)
50g of Lurpak unsalted butter ( she used 2 table spoons of Lurpak Clarified Butter)
2 ½ tablespoons of biryani spices
1 tablespoon of cumin powder  
½ tablespoon of coriander powder
Diced coriander for garnish

Chicken Biryani

Preparation

  1. In a large pot, we add the butter and cook the onions for 7 mins or until the color changes
  2. Add the garlic, ginger, and biryani spices and mix all together
  3. Add the tomato cubes on heat until soft and add the chicken and mix for 3 minute
  4. Add the yogurt and mix all together then add the water gradually (optional)
  5. Add the potato cubes when the chicken is half cooked then cover the pot and leave it on low heat for the potato and chicken to cook
  6. In a separate pot cook the rice till its half cooked only and drain from rest of the water
  7. Add 1/3 of the rice in a large pot, then half of the biryani pot, and then the rice and the rest of the biryani
  8. Leave it on low heat till it’s completely cooked
