Tomato butter for pasta

(Main course - Serves 4)

Ingredients

75 g / 3 oz sun-dried tomatoes
200 ml / 7 fl oz boiling water
125 g / 5 oz LURPAK Slightly Salted Butter
2 tbsp chopped fresh oregano
freshly ground pepper

Pasta
600 g / 1 1/4 lbs fresh pasta (e.g. fettucine)
1 1/2 tbsp salt
4 litres water

400 g / 14 oz frozen fine green peas

Decoration: Fresh oregano leaves.
Accompaniment: 100 g / 4 oz shredded cheese.
    

Instructions

Place dried tomatoes in a bowl and pour the boiling water over. Leave to soak for approx. 2 min. Drain and cut tomatoes into thin slices.

Melt butter in a saucepan without browning and add oregano, pepper and tomato slices. Keep the tomato butter hot.

Pasta: Boil pasta in salted water for approx. 2 min. till tender, but not soft (al dente). Add peas and leave for approx. 1 min. until hot. Drain and return to the hot saucepan. Carefully add the tomato butter. Serve immediately in pre-heated plates together with grated cheese.
