Butter sauce for steamed fish

(Accompaniment - Serves 4)

Ingredients

100 g / 4 oz Lurpak® Slightly Salted Butter
1/2 tbsp plain flour
6 tbsp freshly squeezed orange juice
1/2 tsp finely grated orange peel

Can be served with: Steam 4 plaice (approx. 1.2 kilos / 2 1/2 lbs). Boil 320 g / 11 oz rice and 600 g / 1 1/4 lbs vegetables, e.g. mange-touts and carrots.
    

Instructions

Melt the butter in a frying pan over a moderate heat without browning. Sprinkle in the flour while stirring. Add the orange juice and -peel. Boil the sauce and season.
