Basil butter for pasta

(Main course - Serves 4)

Ingredients

125 g / 5 oz LURPAK Slightly Salted Butter
3 cloves garlic, chopped
50 g / 2 oz pine nuts, chopped
1 tbsp chopped fresh basil
2 tbsp olive oil
1/4 tsp salt

Pasta
600 g / 1 1/4 lbs fresh pasta (e.g. spaghetti)
1 tbsp salt
4 litres water

Decoration: Fresh basil leaves.
Accompaniment: 100 g / 4 oz grated cheese.
    

Instructions

Melt butter in a saucepan without browning. Add garlic and pine nuts and fry at a moderate heat for approx. 1 min. Add basil, oil and salt. Keep the basil butter hot.

Pasta: Boil pasta in salted water for approx. 2 min., till tender, but not soft (al dente). Drain and quickly return to the saucepan. Carefully add basil butter and serve immediately in a pre-heated serving dish together with the cheese.


Tip: Instead of LURPAK Slightly Salted Butter, use LURPAK with crushed garlic instead
