(Starter - Serves 4)
Ingredients
75 g / 3 oz rocket leaves
75 g / 3 oz mizuna leaves
200 g feta cheese, (one piece)
5 slices parma ham (approx. 70 g / 3 oz)
275 g / 910 oz melon, e. g. galia
melon, in small, thin slices
Basil butter
50 g / 2 oz butter
1 tbsp freshly squeezed lemonjuice
freshly ground pepper
1 dl / 100 ml fresh basil leaves, finely chopped
Accompaniment
240 g / 9 oz wholemeal bread

Instructions
Mix the rocket leaves and the mizuna leaves and place on serving plates. Cut the feta cheese in 8 bars. Halve the parma ham slices and roll them like cigars. Place feta cheese, parma ham and melon slices together with the salad.
Basil butter: Melt the butter at high heat, but without browning. Remove from the heat. Add lemonjuice and pepper. Leave to cool for approx. 1 minut and add basil.
Pour the butter over the salad as a dressing and serve immediately.
