(Accompaniment - Serves 4)
Ingredients
4 cucumbers (approx. 700 g / 1,4 lbs.)
2 tbsp butter
1 1/2 tsp fennel seeds, slightly crushed
3 dl / 300 ml whipping cream
6 tbsp dill, coarsely shopped
1 tsp salt
Decoration
fresh dill sprigs
To accompany
500 g / 1 lbs fried fish or poultry
4 lemon wedges
1 kg / 2 1/4 lbs cooked potatoes

Instructions
Peel the cucumbers and cut them in halfs lengthwise. Slice them in approx. 1/2 inch. slices. Allow the butter to melt in a frying pan at high heat, but without browning. Fry the cucumbers for approx. 2 min., stirring occasionally. Add fennel seeds and cream and cook for approx. 3 min. The mixture should be creamy. Add dill and salt. Season to taste.
