(Dessert - Serves 4)
Ingredients
Pancakes - makes 8
2 eggs
3 tbsp cane sugar
1/4 tsp salt
1 dl / 100 ml cold water
65 g / 3 oz flour (approx. 100 ml)
2 dl / 200 ml milk
Caramel
75 g / 3 oz sugar
1 dl / 100 ml water
Apples with apple cider vinegar
3 granny smith apples, finely diced (approx. 400 g / 14 oz)
25 g / 1 oz butter
2 tbsp cane sugar
1 tbsp apple cider vinegar
30 g / 1 oz butter for baking
Caramel whipped cream
2 dl / 200 ml whipping cream
1 tbsp cane sugar
Grill: approx. 3 min.

Instructions
Pancakes: Mix eggs, sugar and salt with water. Whisk with flour until a smooth mixture. Add the milk and leave to rest for approx. 20 min.
Caramel: Place sugar in an even layer on a cold frying pan (approx. 21 cm. diameter). Allow it to melt without stirring - at first 2 min. at high heat, afterwards at moderate heat. Add water and stir carefully and calmly until it blends to an even mixture. Leave to cool.
If there appears lumps of caramel, leave it to rest without stirring, and they will dissolve in a few minutes. Pour caramel into a bowl and refrigerate.
Wipe the pan.
Apples with apple cider vinegar: Allow the butter to melt and brown a little. Fry the apples at high heat for approx. 3 min. Sprinkle with cane sugar and fry for another 1 min or until light golden brown. Remove from the heat and drip with apple cider vinegar.
Pancakes: Allow a little of the butter to melt and become light golden brown on a frying pan (approx. 14 cm. diameter). Pour approx. 50 ml dough in an even layer on the pan. Bake at moderate heat for approx. 1 1/2 min. on each side. Keep the pancakes warm, while the rest of the pancakes are baking. Place the apple dices on the pancakes, roll them and place them side by side in a heat-resistant dish.
Caramel whipped cream: Whip the cream and add the caramel - stir carefully.
To serve: Sprinkle with a little cane sugar and grill in the upper part of the oven.
Serve with icecold caramel whipped cream.
Tip: Use 1 tbsp calvados (french apple brandy) or 2 tbsp freshly squeezed lemon juice and a few lemon wedges instead of apple cider vinegar.
