Ingredients
3 chopped shallots (approx. 75 g / 3 oz)
1 tbsp freshly squeezed lemon juice
3 tbsp water freshly ground pepper
200 g / 7 oz Lurpak® Slightly Salted Butter, in cubes
Can be served with: Boil 525 g / 1 lb mixed vegetables, e.g. broccoli, carrots, green asparagus and spinach leaves. Steam 4 trouts (approx. 1 kilo / 2 1/4 lbs) - and 240 g / 9 oz bread.

Instructions
Boil onions, lemon juice, water and pepper in a heavy-based saucepan, and let it boil over a high heat until there is 1 tbsp left. Beat in the butter, little by little on a very low heat. Use the heat of the hotplate or a very low heat. The butter is not supposed to melt, but keep a creamy consistency. Season. If the sauce has turned cold it can be warmed up over a very low heat. It is not supposed to boil.
Tip: The sauce also tastes good served with steamed vegetables, e.g. as a starter.
