(Accompaniment - Serves 4)
Ingredients
150 g / 5 oz pickled red pepper
5 pickled, red chillies
250 g / 9 oz soft LURPAK Slightly Salted Butter
1 tbsp sweet chilli sauce
2 tsp sweet, mild mustard
1/2 tsp salt
Can be served with: Fry 4 beefburgers (125 g / 4 oz each) and grill 600 g / 1 1/4 lbs vegetables, e.g. tomato, pepper and aubergine - and 240 g / 9 oz bread.

Instructions
Chop the red peppers finely. Remove the seeds from the chillies, and chop the chillies finely. Mix the butter with all ingredients. Shape the butter into a roll (approx. 25 cm / 10") using aluminium foil. Allow to rest, wrapped in the foil, in the refrigerator for at least 1 hour.
Slice half the red pepper butter. Remaining butter can be kept in the refrigerator for approx. 1 week.
