Ingredients
600 g / 1 1/4 lbs uncooked potatoes, coarsely grated
25 g / 1 oz Lurpak® Slightly Salted Butter
1 large onion, coarsely chopped (approx. 100 g / 4 oz)
3 tbsp chopped fresh parsley
1/2 tsp salt freshly ground pepper
25 g / 1 oz Lurpak® Slightly Salted Butter
Decoration: Chopped fresh parsley.
Can be served to: 400 g / 14 oz smoked ham and 300 g / 11 oz green salad, e.g. iceberg and romaine lettuce.

Instructions
Rinse grated potatoes in plenty of cold water. Press with a cloth or kitchen paper to remove water. Put butter in a heavy-based frying pan and heat until golden brown. Spread potatoes, onion and parsley in layers in the frying pan. Sprinkle salt and pepper between layers. Finally, press mixture lightly. Turn heat down, and simmer the potato mixture, covered, for approx. 10 min. Turn the heat up again. Loosen the pancake with a palette knife, and turn it out on a lid.
Put the rest of the butter in the pan. Let the pancake slide back into the butter, turn down heat, and cook without lid for approx. 10 min. Serve in the pan.
