(Main course - Serves 4)
Ingredients
Sauce
50 g / 2 oz LURPAK Slightly Salted Butter
100 g / 4 oz red onions, finely chopped
100 g / 4 oz shallots, finely chopped
2 cloves garlic, finely chopped
200 ml / 7 fl oz chicken stock
75 g / 3 oz cold LURPAK Slightly Salted Butter, in small pieces
1/2 tsp salt
freshly ground pepper
Pasta
600 g / 1 1/4 lbs fresh pasta, e.g. fettucine
1/2 tbsp salt
4 litres water
Accompaniment: 100 g / 4 oz grated cheese.

Instructions
Sauce: Melt butter in a saucepan without browning. Lightly fry the onions for approx. 5 min. until they are transparent. Add stock and boil, uncovered and over a high heat, for approx. 2 min.
Remove the saucepan from the heat and beat in butter a little at a time. Add salt and pepper and season. Keep the sauce hot. Do not boil.
Pasta: Boil pasta in salted water for approx. 2 min., till tender, but not soft (al dente). Drain and quickly return to the saucepan. Carefully add the sauce and serve immediately in a pre-heated serving dish together with the cheese.
