(Dessert - Serves 4)
Ingredients
4 ripe peaches or nectarines (approx. 400 g / 14 oz)
Honey jus
100 ml / 4 fl oz honey, e.g. heather honey (approx. 140 g / 5 oz)
1 tbsp chopped fresh rosemary leaves
1 tbsp freshly squeezed lime juice
Caramelized bread
4 slices of french bread (approx. 1 1/2 cm / 1/2"" thick)
25 g / 1 oz Lurpak® Slightly Salted Butter
2 tsp cane sugar
150 ml / 1/4 pt whipping cream - whipped
Decoration: Fresh rosemary sprigs.
Baking time: Approx. 20 min. at 175°C / 350°F / Gas Mark 4.

Instructions
Cut a little cross in top of each peach and put them into a saucepan with boiling water. Boil the peaches, covered and over a moderate heat, for approx. 2 min. Put them into a bowl with ice-cold water for a short moment. Peel the peaches and place them in a small roasting pan (approx. 18 x 25 cm / 7 x 9 3/4"").
Honey jus: Stir together honey, rosemary and lime juice. Pour the honey jus over the peaches. Bake the peaches in the centre of the oven and drip them with the honey jus 4-5 times during baking.
Caramelized bread: Cut out the bread slices with a glass (approx. 7 1/2 cm / 3"" diam.). Butter the slices on both sides and sprinkle with sugar - press the sugar on the bread. Fry the round bread slices in a dry frying pan over a moderate heat for approx. 2 min. on each side.
Serving: Place the caramelized bread slices on plates and place a baked peach on each. Pour over a little of the warm honey jus and serve with the whipped cream in a separate bowl.
