Corn on the Cob

(Snack - Serves 4)

Ingredients

Coriander butter
50 g / 2 oz soft LURPAK Slightly Salted Butter
2 tsp chopped fresh coriander leaves
1/4 tsp sweet chilli powder
1/4 tsp salt
freshly ground pepper

Corncobs
4 corncobs (approx. 900 g / 2 lbs)
1/2 tbsp salt
1 1/2 litre / 2 1/4 pts water

Decoration: Fresh coriander leaves.
    

Instructions

Coriander butter: Stir together butter and remaining ingredients. Leave it covered in the refrigerator for approx. 30 min. Stir the butter before serving. Season.

Corncobs: Remove leaves from the cobs and rinse them. Boil the cobs in salted water, covered and over a moderate heat, for approx. 15 min. or until tender. Drain the cobs and serve them warm with coriander butter.
