Butter-fried vegetables

(Accompaniment - Serves 4)

Ingredients

75 g / 3 oz LURPAK Slightly Salted Butter
3 onions, halved, in rings (approx. 225 g / 8 oz)
250 g / 9 oz button mushrooms, cut into quarters
200 g / 7 oz bean sprouts
1/4 tsp salt
freshly ground pepper

Decoration: Fresh thyme sprigs.
Can be served with: Fry 4 fillets of red fish (approx. 600 g / 1 1/4 lbs) and boil 320 g / 11 oz rice (mixture with wild rice).
    

Instructions

Melt the butter in a deep frying pan or a saucepan at the highest heat, without browning. Sauté the onions in the butter for about 1 min. while stirring. Add the mushrooms, and sauté for another minute. Add the bean sprouts, and sauté the vegetables for a further minute, 3 min. in all. Add salt and pepper and season. Serve immediately.
