(Main course - Makes 24)
Ingredients
24 thin bamboo skewers - approx. 20 cm / 8" long
5-6 chicken fillets (approx. 600 g / 1 1/4 lbs)
600 g / 1 1/4 lbs beef tenderloin
10-14 lamb's tenderloins (approx. 600 g / 1 1/4 lbs)
12-24 firm plums (approx. 900 g / 2 lbs)
450 g / 16 oz thin slices of smoked beef or pork (bacon)
4 red onions in thick wedges (approx. 200 g / 7 oz)
Spicy butter
250 g / 9 oz LURPAK Slightly Salted Butter
50 ml / 2 fl oz teriyaki sauce (Japanese grilling and frying sauce)
2 tbsp finely grated lemon peel
2 tbsp dried basil
2 tsp ground coriander
1 tsp salt
3 tbsp breadcrumbs
Accompaniments: 600 g / 1 1/4 lbs green salad and 600 g / 1 1/4 lbs bread.
Grill: Approx. 9 min.

Instructions
Put the skewers into cold water for approx. 30 min. Clean all the meat thoroughly and remove all sinew. Cut the 3 kinds of meat into each 24 cubes (approx. 2 x 3 cm / 3/4 x 1 1/4"). Split the plums, stone them and cut into 48 pieces. Cut the slices of smoked meat to make 48 strips. Twist a piece of smoked meat around each piece of plum. Divide the onion wedges into smaller wedges (to make 48 pieces). Remove the skewers from the water and dry them. Place meat, plums with smoked meat and onions (with a little distance between each) alternately on the skewers. Place the skewers covered in the refrigerator.
Spicy butter: Melt the butter in a small heavy-based saucepan over a high heat, but without browning it. Remove the saucepan from the heat and add teriyaki sauce and remaining ingredients.
Line a roasting pan with aluminum foil and place the grid on top. Place half of the skewers on the grid. Dab the spicy butter onto the skewers on both sides with a brush and sprinkle with breadcrumbs - also on both sides. Place grid and roasting pan in top of the oven and grill the skewers for approx. 5 min. Turn the skewers and grill until tender. Dab remaining skewers with the spicy butter, sprinkle with breadcrumbs and grill them.
Tip: The skewers can be ready in the refrigerator for 4-5 hours before grilling. The skewers can be frozen without spicy butter and breadcrumbs. Furthermore, substitute the lamb tenderloin with beef tenderloin and chicken fillet. Instead of plums use fresh abricots or peaches.
