Banana cake

(Cakes and biscuits - 1 cake)

Ingredients

3 medium-sized eggs
175 g / 6 oz sugar
2 tsp vanilla-flavoured sugar (or a few drops of vanilla essence)
125 g / 5 oz plain flour
1 tsp baking powder
100 g / 4 oz LURPAK Unsalted Butter, melted
1 mashed banana (approx. 175 g / 6 oz)

Decoration: 100 g / 4 oz melted dark chocolate.
Baking time: Approx. 55 min. at 175ºC / 350ºF / Gas Mark 4.
    

Instructions

Beat together eggs, sugar and vanilla sugar until fluffy and white. Mix the flour and baking powder, and fold carefully into the egg mixture, alternating with the butter. Fold in the mashed banana. Pour the mixture into a greased rectangular cake mould (about 1 litre / 1 1/3 pts), and bake at the bottom of the oven. Turn the cake out onto a cooling rack. Spread the melted chocolate over the cooled cake.
