Warm salad with green lentils

(Accompaniment - Serves 4)

Ingredients

150 g / 5 oz green lentils, e.g. green lentils from Puy
1 litre / 1 3/4 pts water
1/2 tsp salt
50 g / 2 oz Lurpak® Slightly Salted Butter
3 leeks, cut into thin rings (approx. 200 g / 7 oz)
1 yellow pepper, cut into shorts strips (approx. 125 g / 4 oz)
1 red pepper, cut into short strips (approx. 125 g / 4 oz)
50 ml / 2 fl oz Japanese soya sauce
1/4 tsp salt freshly ground pepper
100 g / 4 oz shredded cheese

Decoration: Leaves of flatleaved parsley.
Can be served to: 400 g / 14 oz fried meat, e.g. lamb chops - and 240 g / 8 oz coarse bread.
    

Instructions

Rinse the lentils well in several changes of water. Drain them in a sieve. Bring water, salt and lentils to the boil in a saucepan. Boil the lentils, covered and over a low heat, for approx. 15 min. or until tender. Drain the lentils in a sieve.

Melt the butter in a stewpot over a high heat, but without browning. Fry leeks and pepper for approx. 2 min. Add the boiled lentils and fry for another min. Remove the pot from the heat and add soya sauce, salt and pepper. Season.

Serving: Arrange the warm salad on plates. Sprinkle with a little liquid and top with the cheese. Perhaps, serve remaining liquid in a separate bowl.


Tip: Warm salad with green lentils is a nice vegetarian dish for 3 persons.
