Baked beetroots

This dish is a quick and easy accompaniment to most dishes with fish and chicken. Cucumbers must be fried shortly to keep them crisp. In Denmark, a well known dish all year round is fillets of plaice, breaded in breadcrumbs or just flour, and fried in butter.
Spinach salad with beetroot and apple
(Accompaniment - Serves 4)
A rich, wintery salad. Dice of apple and beetroot are fried in butter and mixed with the crisp spinach leaves. This salad makes a nice lunch dish as well. Be sure to prepare it just before serving.
