Ingredients
Beans, the day before
300 g / 11 oz white, dried beans
1½ litre / 1/3 pt water
Beans in tomato sauce
10 g / 1 oz Lurpak® Slightly Salted Butter
1 white onion, finely chopped (approx. 75 g / 3 oz)
2 small gloves garlic, finely chopped
1 carrot, finely chopped (approx 50 g / 2 oz)
1 can cherry tomatoes (approx. 400 g / 14 oz)
100 ml / 1/5 pt water
1 tsp table salt
freshly ground pepper
1 tsp Muscovado sugar – or another brown sugar
1 tbsp flatleaved parsley, finely chopped
Börek
300 g / 11 oz Apetina cheese, cubed, plain
1 egg
2 tsp rose paprika
½ tsp table salt
freshly ground pepper
3 green peppers, chopped (approx. 300 g / 11 oz)
300 g / 11 oz filo pastry, thawed
30 g / 1 oz melted Lurpak® Slightly Salted Butter
Decoration: Flatleaved parsley.
Baking time: Approx. 12 min. at 200° C / 400° F / Gas Mark 6.

Instructions
Beans, the day before: Rinse the beans and soak them in water for at least 12 hours. Discard the water.
Beans in tomato sauce: Put the beans in a saucepan and cover with fresh water. Boil the beans at low heat, with the lid on, for approx. 25 min. Drain the beans in a sieve.
Melt the butter in the saucepan at strong heat without browning. Sauté onion, garlic and carrot for approx. 2 min. Add cherry tomatoes from the can with the juice and boil the sauce at moderate heat, without lid, for approx. 10 min. Add water, spices, parsley and the boiled beans. Boil the bean mixture, without lid, for approx. 20 min. or until the sauce has thickened. Season.
Börek: Crumble the cheese finely. Beat together the egg and combine with spices, cheese and peppers. Fold out the thawed filo pastry and cover with a wet cloth to prevent them from drying out. Cut the pastry into 16 equal squares (approx. 22 x 30 cm / 8¾ x 12” diam.). Distribute the cheese mixture on the 16 pastry pieces and quickly form them into rolls. Place them on a baking tray lined with baking paper - with the joints downwards. Brush the rolls with melted butter and bake them in the middle of the oven.
Serving: Serve the warm Börek together with beans in tomato sauce.
Decoration: Parsley.
Tip: Börek can also be served as a snack – without the beans, but accompanied by lettuce.
