(Lunch dish - Serves 4)
Ingredients
8 slices toast (light)
25 g / 1 oz softened butter
125 g / 4 oz fresh Mozzarella, thin slices
4 slices parma ham (approx. 45 g / 2 oz)
75 g / 3 oz grilled, red bell pepper, slices
1/2 tsp salt
freshly ground pepper
Decoration
25 g / 1 oz green salad
125 g / 4 oz cherry tomatoes, in halves

Instructions
Butter the toasts on one side. Sandwich them, with the buttered side out, with Mozzarella, parma ham and grilled bell pepper. Heat a frying pan to high heat. Place the 4 toasts on the pan, lower the heat, and fry them approx. 3 min. on each side. Give the toasts a light squeeze with a spatula while frying. Divide the toasts diagonally, and serve on plates together with the green salad and tomatoes.
Tip: The toasts can be grilled in an electric toaster.
To vary:
Chorizo toast with marinated artichokes: 100 g / 4 oz cheddar cheese, slices, 80 g / 3 oz chorizo sausage, slices, 75 g / 3 oz grilled, marinated artichokes in olive oil, drained and sliced.
