(Brunch dish - Serves 2)
Ingredients
1 egg
1/2 dl / 50 ml milk
1/2 tsp salt
2 slices toast (light)
15 g / 1/2 oz butter
Butter-fried fruit
15 g / 1/2 oz butter
150 g / 5 oz fresh fruit, e.g. pineapple, pear and blueberries, coarsely diced
2 tbsp maple syrup

Instructions
Mix eggs, milk and salt. Place the toasts in the mixture in a dish large enough for them to be placed side by side. Be sure to cover with the egg-mixture. Cover and refrigerate for approx. 15 min.
Allow the butter to melt and brown a little in a frying pan. Fry the toasts at moderate heat for approx. 5 min all in all. Be careful not to burn them. Remove from the heat and keep warm.
Butter-fried fruit: Allow the butter to melt and brown a little in the pan. Fry the fruit at high heat for approx. 1 min. Add maple syrup, stir, and remove from the heat immediately.
To serve: Slice the toasts diagonally and serve on plates with some of the fruit. Serve the rest of the fruit on the side.
